The peel or rind of the tuber contains a poisonous substance called "solanin," which is dissipated and rendered inert when the whole Potato is boiled, or steamed.
When uncooked it contains a notable quantity of Solanin, and it would be dangerous to let animals drink water in which the plant had been boiled.
Potato poisoning has been attributed in some cases to bacterial decomposition of potatoes by proteus bacilli; in other cases, to a poisonous alkaloid, solanin, said to be present in excessive amounts in diseased and in sprouting potatoes.
That solanin is ever really responsible for potato poisoning is considered doubtful by many investigators.
