The three most common of these salts are olein, found in olive oil, palmitin, in palm oil and human fat, and stearin, in lard.
The natural fats and oils consist of complex mixtures of the glycerin compounds of these acids (known as olein, stearin, etc.), as well as various others of a similar sort.
Obviously, then, we could make money if we could turn soft, unsaturated fats like olein into hard, saturated fats like stearin.
Walnut oil is largely used for adulterating olive oil, and to compensate for its high iodine absorption it is mixed with pure lard oil olein, which also retards the thickening effect due to oxidation.
When tallow is saponified there is formed, from the palmitin, stearin, and olein contained, with the cauticizing agent--in this case, lime--a soap.
