Pancreatic juice emulsifies fat, and we have just seen how greedily worms devour fat; it dissolves fibrin, and worms eat raw meat; it converts starch into grape-sugar with wonderful rapidity, and we shall presently show that the digestive fluid of worms acts on starch.
Combined with the bile, this juice acts upon the large drops of fat which pass from the stomach into the duodenum and emulsifies them.
Meantime, the secretions of Lieberkühn's glands (of which there are immense numbers in the small intestine) are further aiding the digestion of the chyme, while the liver (the largest and most important gland in the body) sends its ferments, and the gall-bladder its bile, which further emulsifies the fatty acids and glycerin until they are ready to be absorbed.
The fact that these will readily form emulsions with oils has long been known, and the detergent action of soap has frequently been attributed to it, the explanation given being that the alkali set free by the water emulsifies the fatty matter always adhering to dirt, and carries it away in suspension with the other impurities.
Soap-suds penetrate fabrics more completely than water alone, and when the soap comes in contact with fatty material, it _emulsifies_ it, that is, very finely divides it into minute particles, so that it can be easily removed.
