Sucrose is dextrorotatory, but since fructose has a greater specific rotatory action to the left than glucose has to the right, the mixture resulting from the hydrolysis of sucrose is levorotatory.
They are strongly dextrorotatory (specific rotatory power +192° to +196°); are not fermented by yeast alone, but readily undergo hydrolysis to glucose which does ferment.
This latter property is remarkable, as most of them are compounds of the strongly dextrorotatory _d_-glucose.
Most of the alkaloids contain asymmetric carbon atoms and are, therefore, optically active, usually levorotatory, although a few are dextrorotatory.
